We're so excited to tell you about Theresa's latest creation in the test kitchen! 

As you know, all of our baking takes place at Kitchentown in San Mateo, CA. We're lucky enough to share the space with some truly inspiring cooks, chefs, and brands, including Joyus Juice, an artisanal, small-batch raw juice company. 

We've taken the fiber-rich fruit and veggie pulp left over from their juicing process and turned it into delicious and nutrient-packed crackers. 

One batch, pictured above, features upcycled carrot, beet, and lemon pulp blended with our savory Rosemary Cracker batter. The pulp gives it an extra infusion of  vitamin A, beta-carotene, and antioxidants.

The second batch incorporated pulp of kale, celery, ginger, romaine, and carrot, and is packed with immunity-boosting vitamin C, energy-supporting folate, and the stomach-soothing properties of ginger. 

Theresa is still perfecting the recipe, but keep your eyes out for these crackers that will delight your taste buds and nourish your body at the same time as they fight food waste!
